Grilling Spices for Meat Seasoning
You’ve got you grill set up and picked out the perfect steak, but how to get it ready from the grill?
Herbs and Spices are as old as dirt and have always been an easy way to inject flavor into our food. Spices are produced from plants, trees roots, trees and vegetables to name a few. Seasoning a cut of meat for the grill is as different as individual taste, spicy, savory, tangy, zesty and even bland (some people like this)..
*Let’s keep in mind your flavor comes from three main sources; 1 source of the heat 2 cooking method and 3 The Seasoning
This may sound like useless information except they are all key elements in making you the grill master. It will all make sense when you become the Sensi in your grilling circle.
A couple of basics to help you Season Meat like a pro is to turn your steaks and burgers often and season each time you turn, this reserves the moisture in your meats and also layers flavor into the end result. I have given a few tips below but most of all just grill and enjoy it with friends.
There are two distinct methods to season meat, they are wet and dry, wet is normally the marinade process and dry is done through adding dry spices to the meat directly. Dry Rubs are a good example of this process, dry rubs can add a lot of flavor to your eat if applied about a day in advance. Steak seasoning can be used the same way, I also like to layer my steaks and burgers with a low salt steak seasoning each time I turn my steaks or burgers, this infuse extreme flavor and some smoky good grill lines.
* A question you might have could be salt content; most spices have salt as the first or main ingredient, look out for this, it is not always good for you, but in dry rubbed meats the salt content will not normally make the finished product salty.
* An additional note is in dry rubs a lower sugar content is better, to help avoid burning on slow cooked meats such as ribs, this is not an issue with steaks and burgers.
Wet marinades are more useful on cuts that require more cooking time and cuts that need some flavor help. Many popular grilling sauces are used to add flavor to steaks, burgers and chicken, these are OK but, I don’t recommend these when you are new to grilling. First learn to understand what make a grilled steak good and then develop your own taste for spice mixtures and use the kiss rule for grilling supremacy; “Keep it Simple Stupid”.
How to Season Meat
The most basic school for meat seasoning says salt and pepper to taste. A good basic steak or burger mixture is a good place to start. To take this concept to the next level we should season the meat about a day in advance, except pork chops (they should be seasoned just before grilling).
Get That Boo..Ya…But Not wit BBQ Sauce
You go to your favorite meat market and pay an unreasonable price for a premium steak such as a Fillet or Porterhouse; take it home and smother it with 97 cent bottle of bbq sauce. Wrong, its ok but you can get that at your local burger joint. The better the cut the less enhancement needed or wanted. Spice is what kicks up the flavors, not just hot but fresh unique Spices that help a good steak explode off your tongue and your mouth druels with every bite. that’s what i’m talkin about. When you find your own Boo…Ya spice mix you will know you’ve arrived…..
What is the Perfect Seasoning?
The perfect Seasoning is one that you have developed from cooking and seasoning meat to your taste. My perfect seasoning I make myself from fresh Spices. That is another story but actually could be a good goal to work toward. In the mean time experiment with fresh raw spices and flavors you can buy spices online to meet whatever taste you may have.
